These Air Fryer Baked Potatoes are super easy to make, with a crispy salted skin and fluffy, buttery inside. Serve them with butter or load them up with your favorite toppings. Either way, they're the perfect side dish to nearly any dinner.

Ingredients
- 3-4 large russet potatoes rinsed and dried (depending on the size of your air fryer)
- 2 tbsp vegetable oil
- kosher salt to taste
- 4 tabs of butter about ½ tbsp each
For Garnish and Optional Toppings:
- fresh chives chopped (for garnish)
- sour cream
- chopped bacon
- shredded cheese cheddar recommended
Instructions
- Wash the potatoes under cold running water and scrub gently to remove any dirt. Dry thoroughly with a paper towel.
- Place the russet potatoes in a large bowl, pour the vegetable oil over the potatoes and rub it all over each one. Sprinkle kosher salt evenly, covering the skins completely.
- Preheat the air fryer to 400°F for about 3 minutes to ensure it heats evenly
- Place the potatoes in the air fryer basket in one layer without overcrowding. Cook at 400°F for 35-45 minutes. Flip the potatoes halfway through cooking to ensure they crisp evenly. Check if they’re done by piercing them with a fork. The fork should slide in easily.
- Take the cooked potatoes out of the air fryer and allow them to cool for 2-3 minutes. Slice each potato lengthwise in the middle, taking care as they’ll still be hot. Use a fork to gently fluff the inside.
- Add a tab of butter to the fluffy interior of each potato.
- Sprinkle freshly chopped chives over the top and serve right away.
- For extra flavor, add your favorite toppings like sour cream, chopped bacon, or shredded cheese before serving
