This air fryer baked potato recipe is the simple solution for all your baked potato needs - in fact, this easy recipe may produce the best baked potatoes we've ever had, with fluffy insides and the crispy potato skins that make all the difference.

Ingredients
- 4 baking potatoes
- 3 tbsp olive oil or avocado oil
- 1 tsp sea salt flakes
- 1/2 tsp freshly ground black pepper

Instructions
- Give the potatoes a good scrub under cold water then dry well with a paper towel.
- Pierce the skin all over with a fork or sharp knife. This allows steam to escape the potato during the cooking process.
- Drizzle the potatoes with the oil and sprinkle with the salt and pepper, turning to cover,
- Pre-heat your air fryer to 400°F/200°C. Once preheated, spray the basket with oil and then place the potatoes in the air fryer basket. Air fry them for 45-50 minutes, flipping them at the halfway point.
- Be sure to check the potatoes are baked by piercing the crisp skin with a sharp knife - there should be no resistance. If the middle feels a bit hard, add a few minutes to the cooking time and check again.
- Slice the potatoes in half lengthwise and fluff the interior with a fork. Add a little butter to each potato, plus salt and pepper to taste. Serve as they are or with your favorite toppings.
