Air Fryer Beef Empanadas
Description
The recipe assembles empanadas by placing a spoonful of picadillo—a seasoned ground beef filling—in the center of thawed dough discs. After folding the discs in half and sealing edges with a fork, the tops are brushed with a mixture of egg white and water, which helps them brown in the air fryer. Cooking occurs at 350°F for 8 minutes with a flip halfway for even crisping.
The air fryer method reduces oil usage and cooks the empanadas quickly while producing a golden, flaky pastry shell that encloses a flavorful picadillo mixture. The result is a handheld savory snack or appetizer with a crisp outer layer and moist filling.
If an air fryer is not available, baking in a conventional oven at 400°F for 18-20 minutes is an alternative. The empanadas can also be frozen before cooking and air fried from frozen with a slightly longer cooking time, making them convenient for make-ahead meals.
Ingredients
- 8 empanada discs in frozen section, thawed, Goya brand
- 1 cup picadillo
- 1 egg whisked, white
- 1 teaspoon water
Instructions
- Spray the air fryer basket generously with olive oil spray to avoid sticking, or line the basket with air fryer parchment paper.
- Place 2 tablespoons of the picadillo in the center of each disc. Fold in half and use a fork to seal the edges. Repeat with the remaining dough.
- Whisk the egg whites with water, then brush the tops of the empanadas.
- Air fry in a single layer, in batches as needed 350F 8 minutes, turning halfway or until golden. Remove from heat and repeat with the remaining empanadas.
Notes
- To avoid sticking, spray the air fryer basket generously with olive oil or line it with air fryer parchment paper.
- If you lack an air fryer, bake empanadas in a 400°F oven on a nonstick sheet for 18 to 20 minutes until golden.
- For freezer storage, flash freeze uncooked empanadas on a tray then transfer to a sealed container; freeze up to 3 months.
- Air fry frozen empanadas at 350°F for about 12 minutes, turning once halfway through cooking for even browning.
