Air Fryer Bread And Butter Pudding

Let me introduce you to delicious and simple air fryer bread and butter pudding. Loaded with leftover stale wholemeal bread, cream, butter, and raisins, this is what air fryer desserts are all about.

Ingredients

  • 4 lices bread stale, thick sliced
  • 3 egg large
  • 240 ml cream double
  • 80 ml caster sugar
  • 1 Tsp cinnamon
  • 1 Tsp vanilla essence
  • 120 ml milk semi skimmed
  • 240 ml raisins
  • 2 Tbsp butter
  • olive oil extra virgin, spray
  • icing sugar optional

Instructions

  1. Crack your eggs into a bowl and add in cream, sugar, vanilla, and cinnamon. Mix with a fork.
  2. Chop your bread into big chunks.
  3. Load the bread into the bowl and mix well in the mixture until they are drenched in the batter.
  4. Prepare your air fryer by spraying with extra virgin olive oil and then brushing with a pastry brush.
  5. Load batter soaked bread into the air fryer, leaving any small bits that will break up in the air fryer and cook for 5 minutes at 190c/380f.
  6. Load the bread into the bowl with the small bits, add in raisins and milk and mix well.
  7. Load the contents of the bowl into an air fryer safe container and then top with little bits of butter.
  8. Air fry for a further 5 minutes at 200c/400f.
  9. Then sprinkle with icing sugar before serving.

Notes

  • Quantity. The ingredients above, made enough for 2 people for bread and butter pudding after dinner.
  • Swaps. The greatest thing about bread pudding in the air fryer is you can mix and match seasonings. Such as pumpkin spice for Halloween and ground ginger for Christmas. Though for us because it was Christmas we used Christmas brandy butter and brandy cream.
  • Sugar. Icing sugar = known as confectioners’ sugar in the USA. It adds a lovely sweet texture to your dessert.
