Air Fryer Eggnog Cookies Recipe

EGGNOG COOKIES

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon ground
  • 1 1/4 cups granulated sugar
  • 1 1/2 sticks 3/4 cup butter, salted
  • 1/2 cup eggnog
  • 1 teaspoon vanilla extract
  • 2 egg yolks

EGGNOG GLAZE (OPTIONAL)

  • 1 cup confectioners sugar sifted
  • 2-4 Tablespoons eggnog

Instructions

  1. Eggnog Cookies
  2. In a medium size mixing bowl whisk together the flour, baking soda, and cinnamon.
  3. Using a hand or stand mixer, mix the butter and sugar until light and creamy.
  4. Add the eggnog, vanilla, and egg yolks to the butter mixture. Mix well.
  5. Gradually add the dry ingredients to the wet ingredients and mix until well combined.
  6. Using a small 1-inch cookie scoop form the dough into a ball and 2-4 to the air fryer insert lined with parchment paper.
  7. Cook at 325°F for 6-8 minutes. 6 minutes for chewy cookies and 8 or longer for crispy cookies.
  8. Remove from the air fryer and cool on a baking rack. Glaze if desired.
  9. OVEN BAKED DIRECTIONS
  10. Place cookie dough on a parchment line cookie sheet.
  11. Bake at 350°F for 10-12 minutes (10 minutes for chewy and 12 minutes for crispy cookies).
  12. Remove from oven and place on a baking rack to cool. Glaze if desired.
  13. Eggnog Glaze
  14. Sift the confectioners sugar in a small mixing bowl.
  15. Add eggnog one tablespoon at a time until you reach the desired consistency.
  16. Add glaze to cooled cookies and let sit until the glaze sets.

Notes

  • If using unsalted butter add 1/4 teaspoon of salt to the flour mixture.
  • These cookies will spreed, so place dough 1 1/2 - 2 inches apart on the cookie sheet before baking.
