These air fryer roasted potatoes are crispy on the outside, and fluffy on the inside, tossed with savory olive oil, herbaceous oregano, red pepper flakes, and salt.

Ingredients
- 1 pound baby yellow potatoes washed and halved
- 2 tablespoons olive oil
- 2 teaspoons dried oregano
- 1/2 teaspoon kosher salt
- 1/4 teaspoon crushed red pepper flakes

Instructions
- Preheat the air fryer to 400 degrees F.
- Spray the air fryer basket with non-stick spray or line it with a parchment paper liner.
- In a large bowl add potatoes, olive oil, oregano, kosher salt, and red pepper flakes. Toss to combine and coat evenly.
- Add potatoes to the prepared air fryer, trying to keep them in one even layer, and cook for 15-18 minutes at 380 degrees F. Shaking the potatoes halfway through the cooking time.
- Check doneness by piercing the potatoes with a fork and if it easily goes into he potatoes they are fully cooked. If not, continue cooking for a few more minutes until fully cooked.
