Air Fryer Melting Moments
Description
The Air Fryer Melting Moments recipe uses margarine and caster sugar creamed together to create a light base for these soft cookies. An egg and vanilla essence add moisture and aroma before combining with self-raising flour and desiccated coconut for a tender crumb with a subtle coconut flavor. The dough is notably sticky, so flouring hands and surfaces facilitates rolling the dough into balls.
Each cookie ball is rolled in desiccated coconut, enhancing texture and flavor, then topped with half a glace cherry pressed in gently to prevent detachment during cooking. Air frying at 180°C for about 8 minutes bakes the cookies with even heat, yielding a soft center and a lightly golden, coconut-coated exterior.
These cookies are best served warm and are a neat alternative to traditional baked melting moments. The air fryer streamlines the baking process and provides a crisp texture without using an oven.
Handling the sticky dough carefully by flouring hands prevents loss and ensures uniform cookie shapes. Removing the hand mixer after initial mixing to finish combining with a fork ensures even mixing without overworking the dough.
Ingredients
Kitchen Gadgets:
- Air Fryer
- Hand mixer
Melting Moments Ingredients:
- 100 g margarine
- 100 g caster sugar
- 1 egg medium
- 1 Tsp vanilla essence
- 175 g self-raising flour
- 3 Tbsp desiccated coconut
- glace cherry
Instructions
- Load into a bowl your margarine and caster sugar and mix with a hand mixer until light and fluffy.
- Add in egg and vanilla essence and mix well. Then add in flour and mix again. Get rid of the hand mixer and use a fork to make sure the sides of the bowl are completely clear of the mixture and that its well mixed.
- Load a bowl with dedicated coconut and add flour to your hands. Using your hands make cookie balls with the batter and then roll well in the coconut. Do this until you have done all your batter.
- Load the melting moment cookie dough onto a baking pan that will fit in the air fryer. Add half a glace cherry on top of each, pressing down so that it wont fall off.
- Place into the air fryer and air fry for 8 minutes at 180c/360f and serve while warm.
Notes
- Flour your hands and work surfaces thoroughly before shaping the cookie dough balls due to the sticky texture.
- Press glace cherries gently on top to prevent them falling off during air frying.
- Use the air fryer at 180°C for 8 minutes for optimal texture—soft inside with a lightly crisp coating.
- Mix thoroughly but avoid overmixing once flour is added to maintain a tender cookie crumb.
