Melting Moments Ingredients:

  • 100 g margarine
  • 100 g caster sugar
  • 1 egg medium
  • 1 Tsp vanilla essence
  • 175 g self-raising flour
  • 3 Tbsp desiccated coconut
  • glace cherry

Instructions

  1. Load into a bowl your margarine and caster sugar and mix with a hand mixer until light and fluffy.
  2. Add in egg and vanilla essence and mix well. Then add in flour and mix again. Get rid of the hand mixer and use a fork to make sure the sides of the bowl are completely clear of the mixture and that its well mixed.
  3. Load a bowl with dedicated coconut and add flour to your hands. Using your hands make cookie balls with the batter and then roll well in the coconut. Do this until you have done all your batter.
  4. Load the melting moment cookie dough onto a baking pan that will fit in the air fryer. Add half a glace cherry on top of each, pressing down so that it wont fall off.
  5. Place into the air fryer and air fry for 8 minutes at 180c/360f and serve while warm.

Notes

  • Flour your hands and work surfaces thoroughly before shaping the cookie dough balls due to the sticky texture.
  • Press glace cherries gently on top to prevent them falling off during air frying.
