Description
This recipe begins with salmon fillets cut into one-inch pieces and marinated in a teriyaki sauce combining soy sauce, fresh grated ginger, garlic, orange juice, rice vinegar, honey, and sesame oil. The marinade infuses the salmon with a sweet, tangy, and umami-rich flavor. Air frying at 400°F for 4 to 6 minutes cooks the salmon quickly while developing a slight crispness on the edges.
The leftover marinade is thickened into a glaze using arrowroot starch dissolved in cold water, which is simmered until glossy and thick before coating the cooked salmon bites. Toasted sesame seeds and sliced green onion add nutty and fresh flavors on top. The texture is tender and moist inside with a slightly caramelized exterior from the glaze.

Ingredients
Salmon:
- 4 (6oz) salmon skin removed and cut into 1-inch pieces, fillets
- sesame seeds for garnish, toasted
- green onion thinly sliced for garnish
Teriyaki Sauce:
- 2 teaspoon arrowroot starch or tapioca flour
- ¼ cup water cold
- ¼ cup soy sauce use tamari is gluten-free, low-sodium
- ¼ cup orange juice juice from 1 orange, fresh
- 1 tablespoon rice vinegar
- 2 - 3 tablespoon honey based on your desired sweetness level
- ½ teaspoon sesame oil
- 1 teaspoon ginger very fine, fresh grated
- 2 - 3 large garlic minced, cloves
Instructions
- Dissolve the arrowroot starch in cold water and set aside. Pat the salmon bites dry with paper towels.
- In a small bowl or cup, whisk together the rest of the teriyaki sauce ingredients. Don’t add the starch water yet.
- Toss the salmon pieces in ⅓ cup of the teriyaki sauce in a shallow bowl or large ziplock bag. Let them marinate for 10-20 minutes.
- Preheat the air fryer to 400°F and lightly spray it with cooking oil.
- Add the marinated salmon bites to the air fryer basket. Make sure they don’t overlap. Air fry for 4-6 minutes until cooked through and slightly crispy.
- While the salmon cooks, heat the remaining teriyaki sauce in a small saucepan over medium-high heat. Bring it to a boil.
- Once boiling, reduce the heat to medium-low, whisk in the starch water, and simmer for 3-4 minutes until the sauce thickens. Taste and adjust the seasoning as needed.
- Remove the salmon bites from the air fryer and glaze them with the thickened teriyaki sauce.
- Serve the salmon on a bed of warm rice, topped with sesame seeds, sliced green onions, and your favorite roasted or steamed vegetables (I recommend broccoli or edamame).

- Honey can be swapped with maple syrup, coconut sugar, or light brown sugar.
- Arrowroot starch can be replaced with tapioca flour or cornstarch.
- Fresh grated ginger offers the best flavor; ground ginger may be used as a substitute.
- Rice vinegar can be substituted with white wine vinegar in equal amounts.
- Frozen salmon fillets should be thawed in the refrigerator for 6 hours or at room temperature for 2 hours before cooking; a lukewarm water bath can expedite thawing.
- Store leftovers in airtight containers in the refrigerator up to 3 days.
- Reheat in an air fryer at 350°F for 3–5 minutes, a sauté pan on medium heat for 5–8 minutes, or microwave for 1–2 minutes.
- Use foil or an air frying pan in the air fryer basket to catch sauce drips during reheating.
