Almond Shortbread Cookies Recipe

Almond Shortbread Cookies are made from almond flour, powdered sugar, and softened butter, complemented by vanilla and a mild holiday spice mix. The dough is mixed until it just binds, rolled into balls, coated in powdered sugar, then baked to develop a tender, crumbly texture with a subtle sweet and spiced flavor. These cookies offer a delicate crumb and festive aroma that fits seasonal baking.

Description

This recipe combines almond flour and powdered sugar with softened butter and vanilla essence to form a shortbread dough. A holiday spice mix that includes granulated sugar, pumpkin pie spice or cinnamon, and sea salt infuses the cookies with a warm, gentle spice profile. The dough initially appears dry and crumbly during mixing, but comes together with extended beating.

Portioned dough balls are rolled in powdered sugar before baking, creating a subtly sweet coating. The cookies bake without spreading, so they can be placed close on the parchment-lined sheet. After about 10 minutes at 350 degrees, the cookies puff slightly and develop a delicate crumbly consistency characteristic of shortbread. Once cooled, an additional dusting of the holiday spice mix adds aromatic flavor and visual appeal.

This recipe can be prepared without specialized equipment like a Vitamix, making it accessible for home bakers using a fork, food processor, or electric beaters. Doubling the batch allows for abundant sharing during festive occasions.

Ingredients

Servings
  • 1 ¼ cups almond flour
  • ¼ cup powdered sugar
  • ¼ cup butter softened
  • 1 teaspoon vanilla
  • ½ teaspoon holiday spice mix plus a little extra to top the cookies, recipe below
  • 2 tablespoons powdered sugar to roll the cookies in

Holiday Spice Mix

  • 1 tablespoon granulated sugar
  • 1 teaspoon pumpkin pie spice or ground cinnamon
  • ½ teaspoon salt sea salt

Instructions

  1. Preheat your oven to 350 degrees. Line a baking sheet with parchment paper. Make the Holiday Spice Mix by mixing the ingredients together in a small bowl.
  2. Add all the cookie ingredients to a large mixing bowl. (See notes.) Using electric beaters, mix until the dough sticks together. This will take about 6-7 minutes and will look dry and crumbly until the last second when it finally comes together.
  3. Use a small cookie scoop or tablespoon to scoop the dough into 12 portions. Roll into balls then dip each ball in powdered sugar.
  4. Place the cookies onto the baking sheet. They don't spread so you can place them quite close together. Bake for 10 minutes, until they have puffed up slightly. Let them cool completely then top them with a little extra holiday spice mix.

Notes

  • Various mixing methods can be used: Vitamix, food processor, electric beaters, or a fork, though using a fork requires more effort.
  • If blending with a Vitamix, refrigerate the dough for about 30 minutes before baking to firm the butter that may have melted during mixing.
  • The holiday spice mix adds standout seasonal flavors enhancing the cookies' aroma and taste.
  • This recipe doubles well for larger batches, making it suitable for holiday gift giving or gatherings.
