Anzac Biscuits

Anzac Biscuits are crisp, golden cookies made from rolled oats, flour, sugar, and a combination of butter and golden syrup that provides a chewy texture and rich sweetness. Baking soda mixed with hot water helps leavening and creates a light crumb. Description

This recipe blends rolled oats, plain flour, and caster sugar as the dry ingredients. Butter and golden syrup are gently melted together before combining with a bicarbonate of soda and hot water mixture, which froths and activates the leavening. The wet mixture is stirred into the dry ingredients to form a dough that’s rolled into balls, flattened slightly to allow spreading.

Baked at a moderate 160°C (320°F) until golden, the biscuits develop a crisp exterior with a chewy inside. The combination of oats and golden syrup lends a toasted, caramel flavor that defines Anzac biscuits.

  • 1 cup rolled oats (85 grams)
  • 1 cup plain flour (all-purpose flour) (135 grams)
  • 1 cup caster sugar (210 grams)
  • 1 teaspoon baking soda
  • 115 grams butter
  • 1 tablespoon golden syrup (20 ml)
  • 1 tablespoon water 20 ml, hot

Instructions

  1. Pre-heat oven to 160 degrees celsius / 320 degrees fahrenheit (fan-forced)
  2. Line two baking trays with baking paper.
  3. Combine oats, flour and sugar in a mixing bowl.
  4. Heat butter and syrup in a saucepan over low heat until melted. Remove from heat.
  5. Mix bicarb soda and hot water and then add to the melted butter and syrup mixture. The mixture will froth up.
  6. Add frothy melted mixture to dry ingredients and stir well to combine.
  7. Roll tablespoonfuls of the mixture into balls. Place on lined baking tray and flatten a little with your fingers. Space apart to leave room for spreading.
  8. Bake for 18 minutes or until a golden brown colour.
