Ingredients
- 3 apple peeled, cored and sliced
- 350 g marzipan see notes, aka mandelmassa, or 200g baking marzipan
- 3 egg medium-sized
- ¾ cup granulated sugar
- 150 g butter at room temperature
- 1 teaspoon almond extract (optional)
- 60 g all-purpose flour (or gluten-free all-purpose flour)
- ¾ teaspoon cinnamon
- ½ teaspoon cardamom
- 3-4 tablespoon icing sugar to garnish, optional
Instructions
- Grease a 24cm baking tin and preheat the oven to 392°F, 200° C.
- Separate the egg yolks from the whites. In a bowl, whisk the egg whites until stiff peaks form.
- In another bowl, cream the butter and sugar at low speed. Add the almond extract (optional) and egg yolks, then briefly whisk to combine. Carefully fold the egg whites into the mixture and stir in the cardamom.
- Add the flour, a little at a time, and use a spatula to combine. Roughly grate the marzipan or mandelmassa and mix this into the batter.
- Transfer the apples to a bowl, top with cinnamon, and combine.
- Pour the batter into the greased baking tin and carefully arrange the apple slices on top.
- Bake for 35 minutes or until a toothpick inserted at the center comes out clean. Dust the äppelkaka with icing (powdered) sugar, and serve with some vanilla sauce.
