Äppelkaka Swedish Apple Cardamom Cake

Äppelkaka is a Swedish apple and cardamom cake featuring a tender batter enriched with marzipan, spiced with cardamom and cinnamon, and topped with cinnamon-coated apple slices. The cake offers a fragrant, moist texture balanced by almond flavors and warm spices. Its subtle sweetness pairs well with vanilla sauce for a comforting dessert.

Description

This Äppelkaka Swedish Apple Cardamom Cake recipe combines peeled, cored, and sliced apples with a batter made from butter, sugar, eggs, almond extract, and grated marzipan, which adds moistness and a nutty sweetness. Ground cardamom and cinnamon provide a gentle aromatic warmth characteristic of Scandinavian baking. The batter incorporates folded stiff egg whites to contribute lightness.

The assembled cake is topped with cinnamon-coated apple slices, then baked until set and lightly golden. The texture is moist and tender, with marzipan giving a rich almond flavor inside, complemented by the fragrant cardamom and sweet-tart apples on top. The icing sugar garnish adds a delicate finish.

Serving the cake with vanilla sauce creates a classic combination, enhancing the cake's warmth and providing a creamy contrast. The dessert suits afternoon gatherings or festive occasions.

The notes mention that Swedish mandelmassa, a less sweet marzipan, is preferred for authenticity, but baking marzipan can be used in smaller amounts if mandelmassa is unavailable.

Ingredients

Servings
  • 3 apple peeled, cored and sliced
  • 350 g marzipan see notes, aka mandelmassa, or 200g baking marzipan
  • 3 egg medium-sized
  • ¾ cup granulated sugar
  • 150 g butter at room temperature
  • 1 teaspoon almond extract (optional)
  • 60 g all-purpose flour (or gluten-free all-purpose flour)
  • ¾ teaspoon cinnamon
  • ½ teaspoon cardamom
  • 3-4 tablespoon icing sugar to garnish, optional

Instructions

  1. Grease a 24cm baking tin and preheat the oven to 392°F, 200° C.
  2. Separate the egg yolks from the whites. In a bowl, whisk the egg whites until stiff peaks form.
  3. In another bowl, cream the butter and sugar at low speed. Add the almond extract (optional) and egg yolks, then briefly whisk to combine. Carefully fold the egg whites into the mixture and stir in the cardamom.
  4. Add the flour, a little at a time, and use a spatula to combine. Roughly grate the marzipan or mandelmassa and mix this into the batter.
  5. Transfer the apples to a bowl, top with cinnamon, and combine.
  6. Pour the batter into the greased baking tin and carefully arrange the apple slices on top.
  7. Bake for 35 minutes or until a toothpick inserted at the center comes out clean. Dust the äppelkaka with icing (powdered) sugar, and serve with some vanilla sauce.

Notes

  • Swedish mandelmassa (almond paste) is less sweet than regular baking marzipan; adjust the amount if substituting to balance sweetness.
