Apple Banana Bread Recipe
Description
The Apple Banana Bread recipe uses mashed bananas blended with eggs, brown sugar, applesauce, and plain yogurt for a moist batter. Adding peeled and chopped apples introduces subtle bursts of fruit texture. The dry ingredients include flour, cinnamon, baking soda, and salt, folded into the wet mixture to avoid overmixing. A streusel topping made from oats, flour, brown sugar, and butter adds a crunchy finishing touch after baking at 350°F for about an hour.
This bread is comforting with warm spice notes and a balance of sweetness from both banana and apple. Its texture is soft yet holds together well with the fruit pieces and streusel noticeable on top. Remove it from the pan after a short cool-down to maintain its shape while cooling completely on a rack.
Ingredients
- 3 medium banana 1 ½ cups, ripe
- 2 large egg
- ¾ cup brown sugar
- ½ cup applesauce
- ½ cup PLAIN yogurt
- 2 cups all-purpose flour
- 2 teaspoons cinnamon
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 medium apple peeled, cored, and chopped
Streusel Topping
- ¼ cup rolled oats
- 2 tablespoons all-purpose flour
- 2 tablespoons brown sugar
- 2 tablespoons butter at room temperature
- 1 pinch salt sea salt
Instructions
- Preheat your oven to 350 degrees Fahrenheit. Butter a 9x5 inch loaf pan. Use a fork or your fingers to mix the streusel ingredients in a small bowl.
- Mash the bananas in a large bowl then whisk in the eggs, brown sugar, apple sauce, and yogurt.
- In a medium-sized bowl, whisk the flour, cinnamon, baking soda, and salt.
- Fold the dry ingredients into the wet ingredients. When only a few streaks of flour remain, stir in the apple.
- Pour the batter into the loaf pan then top with the streusel topping.
- Bake the banana bread for 65-75 minutes, or until a toothpick inserted into the center comes out clean. Check the banana bread after 45 minutes and, if it's browning on the top, cover it loosely with foil. Let the banana bread cool on your counter for 10 minutes then invert the pan to remove it then let it cool completely on a cooling rack.
