Ingredients

  • 3 egg whole
  • 3/4 cup superfine sugar
  • 1 stick about 1/2 cup of butter, melted
  • 1 tsp vanilla extract
  • 1/2 cup all-purpose flour
  • 1/2 cup almond flour plus 1/2 Tbsp for dusting
  • 1/2 tsp baking powder
  • salt a pinch
  • 3 apple 1 peeled and cut into large chunks (approximately one heaping cup), the other 2, sliced, Honeycrisp, cored
  • 1/2 Tbsp turbinado sugar for dusting

Instructions

  1. Preheat oven to 350F
  2. Line the bottom of a 9-inch, removable bottom pan with parchment paper, and brush the sides with a little butter - set aside
  3. Add the turbinado sugar and the 1/2 tbsp of almond flour to a small bowl, and whisk to combine - set aside
  4. Add the all purpose flour, the almond flour, the baking powder and the salt to a large bowl, and whisk to combine - set aside
  5. Beat the eggs and the sugar in a large bowl, using a hand mixer, until the eggs look frothy and stringy (a few minutes on medium speed)
  6. Add the melted butter and the vanilla extract to the egg mixture, and beat a few more minutes
  7. Add the dry ingredients to the egg mixture, and beat until combined
  8. Add the apple chunks, and fold with a spatula to combine
  9. Pour batter into lined pan
  10. Decorate with the apple slices
  11. Sprinkle with the turbinado sugar mixture, as desired
  12. Bake for approximately 45 minutes to about an hour, or until toothpick inserted in the center comes out clean
  13. Cool in the pan in a cooling rack for approximately 10 minutes
