Apple Chicken Recipe
Description
The Apple Chicken Recipe is built around chicken thighs cooked with bacon slices, diced apples, and potatoes in a savory and slightly sweet sauce made from Dijon and grainy mustards combined with honey and chicken stock. Initially, bacon is cooked until crispy, then apples are browned in the rendered fat for caramelized sweetness. Chicken thighs are then seared to develop a golden skin, then simmered with potatoes in the tangy mustard-honey sauce in an ovenproof pan. Baking covered and then uncovered allows the chicken and potatoes to cook through while browning the top. The final addition of spinach slightly wilts from residual heat for added texture and nutrition.
This one-pan meal combines a balance of savory, sweet, and tangy flavors. It can be served as a hearty main course for dinner, providing protein, starch, and vegetables together. The mustard-based sauce adds a creamy, mildly spicy punch to the dish. The crispy bacon and browned apples contribute both texture and flavor contrasts.
Ingredients
- 4 trips Bacon cut into ½ inch slices
- 2 large apple diced, crispy
- 8 chicken thigh skin on or off - your choice, bone-in
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 cup chicken stock
- 2 tablespoons Dijon mustard
- 2 tablespoons grainy mustard
- 2 tablespoons honey
- 1 lb potatoes quartered, nugget
- 2 cups spinach
Instructions
- Preheat your oven to 375 degrees Fahrenheit. Cook the bacon in a large, ovenproof frying pan over medium heat until it's crispy, about 10 minutes. Remove it from the pan with a slotted spoon.
- Turn the heat up to medium-high. Add the apples to the pan and let them cook until they turn golden brown, about 5 minutes. Remove them from the pan and put them with the bacon.
- Season the chicken thighs with salt and pepper and add them to the pan side side down. When they are golden brown, remove them from the pan.
- Add the chicken stock, dijon mustard, grainy mustard, and honey to the pan and whisk well. Add the potatoes and stir them through the sauce. Nestle the chicken thighs into the potatoes, browned side up.
- Cover the pot and put it into your oven to cook for 30 minutes. Remove the cover from the pot and let it cook for 15 minutes more.
- Remove the pot from the oven and add the bacon, apples, and spinach. Pop it back in your oven for 5 minutes to wilt the spinach.
