Ingredients
- ⅓ cup of applesauce
- ½ cup of vegetable oil
- 1 cup of sugar
- 1 cup of grated apple (I used Honeycrisp)
- 1 teaspoon of vanilla extract
- 1 ½ cups of flour
- ¼ teaspoon of salt
- 1 teaspoon of baking powder
- ½ tablespoon of cinnamon
- ½ cup of raisins or vegan chocolate chips (optional)
- ½ cup of chopped walnuts (optional)
Instructions
- Preheat the oven to 350 degrees F.
- In a large bowl, mix together the applesauce, oil, sugar, apple, and vanilla in a bowl. Then add the remaining ingredients and whisk until thoroughly combined.
- Pour the batter into a greased loaf pan and bake for 50 to 55 minutes.

Notes
- Wash and peel the apples: Take the time to peel the apples with a vegetable peeler before you grate them. The skin doesn’t break down well as it cooks, so you’ll end up with stringy pieces in the bread.
- Instead of grating the apples: Chop them into small chunks instead!
- To prevent the apples from browning: Submerge the diced apple pieces in a bowl of water mixed with a splash of lemon juice before adding them to the batter.
- Measure the flour correctly: It’s best to spoon the flour into a measuring cup and level the excess off the top with a knife rather than scooping it from the bag. Too much flour in the dough = dry and dense bread.
