Apple cupcakes with cream cheese frosting

These apple cupcakes feature grated tart apples like Granny Smith or Bramley, folded into a spiced batter with cinnamon and vanilla. After baking until golden and springy, they’re topped with a whipped cream cheese frosting that balances sweetness with a slight tang. The cupcakes offer moist, tender crumb moments enriched by fresh apple flavor and finished with a smooth, creamy icing.

Description

Apple cupcakes with cream cheese frosting combine grated apples with a mixture of flour, sugar, baking powder, cinnamon, and salt, with yogurt, eggs, oil, and vanilla creating a moist batter. The apples add moisture and fruity tartness, complemented by the warm spice of cinnamon. After baking, a light springy texture results, indicated by a clean skewer test.

The frosting is made by whipping heavy cream to firm peaks before folding in cream cheese, powdered sugar, and a pinch of salt. This creates a rich but airy topping with a slight tang that cuts through the sweetness of the cupcakes. The combination makes for a balanced dessert with fresh fruit notes.

The recipe is flexible on apple types; tart cooking apples tend to enhance flavor depth, but sweeter eating apples work too. Cinnamon and vanilla are suggested flavorings, with cinnamon alone also acceptable. These cupcakes suit casual treats or celebrations, enjoyed fresh for best texture.

Ingredients

Servings

For the cupcakes

  • 7 ounces apple Bramley or Granny Smith
  • 1 cup all-purpose flour also called plain flour
  • ½ cup granulated sugar
  • 2 teaspoon baking powder
  • ½ teaspoon cinnamon powder
  • ¼ teaspoon salt
  • 2 tablespoon natural yogurt
  • 2 egg
  • ½ cup canola oil or vegetable oil
  • 1 teaspoon vanilla extract

For the cream cheese frosting:

  • 1 ¼ cup double cream aka heavy cream
  • ¼ cup powdered sugar aka icing sugar
  • ½ cup cream cheese
  • salt a pinch

Instructions

To make the cupcakes:

  1. Line your cupcake tray with cupcake cases.
  2. Preheat the oven to gas 4, 180°C/ 350°F.
  3. In a mixing bowl put the flour, sugar, baking powder, cinnamon powder, and salt. Give it a stir until it is all combined. Set aside.
  4. Then put the yogurt, egg, oil, and vanilla extract in a jug. Lightly beat it until all is mixed. Set aside.
  5. Peel, core, and grate the apples.
  6. Next, make a hole in the center of the flour mixture and pour the egg mixture in. Using a whisk or a handheld mixer, whisk the mixture until the batter is thick and smooth.
  7. Add the grated apple in, and stir the mixture using a spatula until combined.
  8. Spoon the batter into the cupcake cases and bake for about 15-18 minutes at gas 4, 180°C/ 350°F. Or, until the top springs back when you touch or a skewer comes out clean when you pierce.

To make the frosting:

  1. Using a whisk or a mixer (stand mixer or handheld mixer), whip the double cream until firm-peak.
  2. Then in another bowl, mix the cream cheese with the icing sugar and a pinch of salt.
  3. Using a spatula, add the cheese mixture to the double cream and carefully but quickly mix it until all combined. Take care not to overmix it because it can deflate and be a bit runny. Your mixture will be softer. Put it in the refrigerator for an hour before using it.

Notes

  • Prefer tart apples like Granny Smith or Bramley for distinct flavor, but sweeter apples can also be used.
  • Cinnamon and vanilla together add complexity, though cinnamon alone is sufficient for flavoring.
  • Test doneness by checking if the cupcake top springs back or a skewer comes out clean before removing from oven.
