Apple Tart Recipe

This Apple Tart features a flaky, buttery crust topped with thinly sliced apples arranged in concentric circles. The apples are brushed with melted butter and sprinkled with sugar, then folded edge dough creates a rustic look. The tart is baked until golden and can be reheated before serving.

Description

The Apple Tart Recipe begins by making a dough from flour, salt, and cold butter mixed until crumbly, then bound with ice water to form a ball. The dough is rolled thin and placed on a parchment-lined sheet. A sprinkle of sugar and a little flour prepares the base before arranging thin apple slices in overlapping circles, leaving a border around the edge. The dough edges are folded inward over the apples in a relaxed, freeform manner.

After arranging, the apples are brushed with melted butter and sprinkled with more sugar to encourage caramelization during baking. The tart can be refrigerated unbaked and baked until the crust is golden and apples tender. This results in a rustic tart with a flaky crust and soft, sweet baked apples.

The tart is suitable for serving as dessert or a sweet snack and can be enjoyed warm or at room temperature.

A practical tip is to store the baked tart overnight at room temperature and reheat gently in a 325° oven before serving to refresh its texture and warmth.

Ingredients

Servings
  • 1 1/2 cups all-purpose flour
  • 1 pinch salt
  • 7 oz (200g) butter divided (6 ounces (175g) cold, cut into 1/2-inch (1cm) pieces, and 2 tablespoons melted, unsalted
  • 1/3 cup water ice
  • 3 1/2 tablespoons sugar
  • 4 large apple cored and cut into 1/4-inch (5mm)-thick slices
  • 2 tablespoons apricot preserves melted and strained

Instructions

  1. Using a stand mixer with a paddle attachment, mix the flour, salt, and butter on low speed for 2 minutes. Slowly add ice water until the dough forms a ball.
  2. Transfer the dough to a lightly floured work surface and knead it 2 or 3 times, just until it comes together. Pat the dough into a disk. On the lightly floured work surface, roll out the dough into a 16- to 17-inch (450g to 480g) round, about 1/4 inch (5mm) thick.
  3. Line a large, unrimmed baking sheet with parchment paper. Roll the dough around the rolling pin and then unroll it onto the prepared baking sheet.
  4. In a small bowl, combine 2 tablespoons of sugar with the remaining 1 tablespoon of flour and sprinkle it over the dough. Arrange the apple slices on top in overlapping concentric circles, leaving about 3 inches (7 cm) of the edge. Fold the dough over the apples in a free-form fashion.
  5. Brush the apples with melted butter and sprinkle them with the remaining 1 1/2 tablespoons of sugar. Refrigerate the unbaked tart until slightly chilled, about 10 minutes.
  6. Preheat the oven to 400°F (207°C). Bake the apple tart in the center of the oven for 1 hour, or until the apples are tender and golden, and the crust is deep golden and cooked through. Brush the apples with melted preserves. Slide the parchment onto a wire rack and let the tart cool slightly before serving.

Notes

  • Store baked tart at room temperature overnight to maintain texture without refrigeration.
  • Reheat the tart in a 325°F oven before serving to warm through and slightly crisp the crust again.
