Apple Turnovers
Description
The recipe begins by cooking peeled, finely chopped apples with caster sugar and cinnamon into a soft compote. Puff pastry is rolled out and cut into squares, each filled with a portion of the apple mixture. The pastry is folded into triangles and edges sealed with a fork to contain the filling during baking. An egg wash creates a glossy, golden crust and an additional sprinkling of sugar adds slight sweetness and crunch.
Baked at 200°C until puffy and golden, the turnovers have a flaky crust with a tender, warmly spiced apple filling inside. The aromatic cinnamon and soft apples create a classic, balanced flavor profile. These can be dusted with icing sugar for extra sweetness and presentation.
Variations include swapping cinnamon for other spices like nutmeg or ground ginger, adding vanilla extract for aroma, or substituting some apples with pears for subtle taste differences. Ensuring evenly sized apple pieces helps the filling cook uniformly.
Ingredients
- 375 g puff pastry
- 3 apple peeled and finely chopped
- 35 g caster sugar for the apples
- 5 g caster sugar for sprinkling
- 0.5 teaspoon cinnamon
- 1 egg whisked
- icing sugar (optional)
Instructions
- Preheat your oven to 200°C/180°C(fan)/400°F/Gas 6.
- Put 3 Apple, 35 g Caster sugar and 0.5 teaspoon Cinnamon into a pan and heat on low until it forms a compote, about 10 minutes.
- Unroll 375 g Puff pastry and cut into six equal squares.
- Put ⅙ of the apple mixture into the middle of each square. Fold over the pastry corner to corner, to form a triangle. Use a fork to crimp and seal the pastry edges.
- Put the turnovers onto a lined baking tray, brush with 1 Egg and cut a small hole in the top of each turnover. Sprinkle over 5 g Caster sugar.
- Put in the centre of the oven and cook for 18-20 minutes, until golden on top and they have puffed up. Leave to cool on a rack and dust with Icing sugar (optional).
Notes
- Chop apples evenly to ensure consistent cooking and texture in the filling.
- Use alternatives to cinnamon such as nutmeg, ground ginger, or a spice blend to vary flavor.
- Add vanilla extract or vanilla paste to the apple compote for enhanced aroma.
- Consider replacing some apples with pears for a different fruit flavor.
- Dust turnovers with icing sugar after baking for a classic finish, or drizzle with caramel sauce for extra indulgence.
