Apricot Farmers Cheesecake

Apricot Farmers Cheesecake is a baked dessert combining a buttery flour crust, fresh or canned apricots, and a smooth farmers cheese custard with whipped cream folded in. The mixture is layered with halved apricots placed flesh-side down, topped by a rich cheese filling, then baked until firm and golden. This cake balances the mild tang of farmers cheese with the natural sweetness of apricots, creating a moist and tender texture. It makes a delightful treat that showcases seasonal fruit in a rustic style cheesecake dish.

Description

Apricot Farmers Cheesecake features a soft flour and butter crust pressed into a baking dish, creating a base for the fresh apricots arranged cut side down. The filling blends farmers cheese with beaten eggs and potato starch, enriched by whipped heavy cream folded into the mixture for lightness. Baking for about an hour at moderate temperature firms the custard while maintaining a creamy texture. The apricots add bursts of fruitiness and moisture beneath the dense yet fluffy cheese layer.

The dessert offers a harmonious contrast between the subtle tang of farmers cheese and the mellow sweetness of apricots. This cheesecake can be sliced for serving at dessert time or festive gatherings. Its structure is firm enough to hold shape yet tender for moist bites.

Letting the cake cool fully before slicing helps it set properly. Using either fresh or canned apricots provides flexibility depending on availability. The use of potato starch in the filling supports a smooth, custard-like consistency.

Ingredients

Servings
  • 6 egg
  • 11 tbsp butter unsalted
  • 2/3 cup sugar
  • 2 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 8 apricots fresh or canned
  • 3 cups farmers cheese
  • 1 cup heavy whipping cream
  • 1/4 cup potato starch

Instructions

  1. Pull the butter out of the fridge and let it soften at room temperature.
  2. Using a fork, combine the butter with 1/3 cup sugar. Whisk in three eggs.
  3. Add the flour and baking powder into the mixture and stir until all ingredients are well combined.
  4. Grab an 11-inch wide baking dish. Place the dough in the center. Using your fingers, work the dough to cover the inside of the baking dish, creating a deep dish crust.
  5. Cut the apricots in half and place them flesh side down at the bottom of the dish.
  6. Whisk 3 eggs until smooth. Add farmers cheese and potato starch into the beaten eggs. Whisk or beat with a mixer until the mixture is smooth.
  7. In a separate bowl, whisk the heavy whipping cream with 1/2 cup sugar until you get stiff peaks. Fold the whipped cream into the farmers cheese mixture.
  8. Spread the cheese mixture over the top of the apricots.
  9. Bake at 350°F for 60-75 minutes. Test doneness by touching the center. It should be on the firm side. Let the cake cool completely before serving.
