Ingredients
- 8 apricot ripe
- 50 grams sugar
- 40 grams pistachio nuts shelled, raw
- 40 grams almonds blanched
- 60 grams butter room temperature, unsalted
- 1 vanilla pod seed removed and reserved
Instructions
- Preheat the oven to 190°C (375°F) and grease a gratin dish with butter. Set aside.
- Rinse and wash the apricots, then pat them dry.
- Cut each apricot in half and remove the pit in the center.
- Place the almonds and pistachios into a food processor and blitz until coarse powder is achieved.
- Pour this almond mixture into a bowl and add the butter, vanilla, and sugar, and mix everything together until creamy consistency.
- Fill each of the apricot halves with this cream placing them side by side in the gratin dish.
- Place into the preheated oven and bake for about 20 minutes.
- remove from the oven and slightly cool before serving.
