Arroz Doce Cremoso - Brazilian Rice Pudding with Condensed Milk
Description
This rice pudding begins by boiling long-grain rice in water until tender. Afterward, sweetened condensed milk and whole milk are added along with a blend of whole spices — cloves, cinnamon sticks, and a vanilla bean or extract — imparting warmth and fragrance. The mixture is cooked over medium heat until it thickens to a creamy consistency. Heavy cream is stirred in at the end to enhance richness.
The pudding has a smooth and creamy texture balanced by the sweetness of condensed milk and the subtle spice flavors. It can be enjoyed warm or cold depending on preference, with an optional dusting of ground cinnamon adding extra aroma and mild spice.
Storage involves pressing plastic wrap directly onto the pudding's surface to prevent a skin from forming and refrigerating it once cooled. When reheating refrigerated pudding, adding a splash of cream or milk can loosen the texture if it has thickened too much. These practical steps help maintain the dessert’s creaminess and freshness.
Ingredients
- 1 cup white rice long grain, unwashed
- 2.5 cups whole milk
- 1 oz sweetened condensed milk canned
- 5 clove whole
- 1 vanilla bean or a teaspoon of vanilla extract
- 2 cinnamon stick
- salt pinch
- 1/4 cup heavy cream
- cinnamon optional, powdered for serving
Instructions
- Add the rice to a medium pan, cover with 2 cups of water, and bring to a boil over high heat.
- When the water boils, reduce the heat to low, cover and let simmer until the rice is cooked. This should take about 10 minutes. If your rice overcooks, it's OK. This recipe is very forgiving.
- When the rice is cooked, add the sweet condensed milk, the milk, the spices and a pinch of salt, and stir to combine.
- Cook over medium heat until the mixture thickens, about 15-20 minutes, stirring occasionally.
- Add the heavy cream and stir to combine, simmer another minute, and turn off the heat.
- Fish for the whole spices, remove and discard them.
- Serve warm with ground cinnamon, or as is.
Bom Apetite!!
Notes
- Press plastic wrap directly onto rice pudding surface before refrigerating to avoid film formation.
- Pudding can be served warm or cold according to preference.
- When reheating refrigerated pudding, add a splash of cream or milk to adjust texture if needed.
