Ashkephardic Charoset

Ashkephardic Charoset is a sticky paste made from dates, walnuts, apples, banana, raisins, and sweet kosher wine, seasoned with cinnamon and black pepper. The ingredients are processed into a smooth, thick mixture, providing a sweet, spiced spread traditionally served chilled during Passover. Garnishes of walnut halves and lemon-sprinkled apple slices add texture and freshness.

Description

This recipe combines pitted dates and walnut halves processed into a crumbly base, then incorporates raisins, banana, peeled apple slices, sweet kosher wine, cinnamon, and black pepper. The mixture is blended until smooth with a consistency resembling hummus. The warmth of cinnamon and slight heat from black pepper balance the natural sweetness, while kosher wine adds depth and softens the paste.

The charoset is best served chilled, offering a cool, moist texture that complements the chewy nuts and fruit. Garnishing with walnut halves and lemon-dusted apple slices adds contrasting textures and helps prevent oxidation of the fruit. As the apples and bananas oxidize overnight, darkening occurs but does not affect flavor.

This dish is traditionally served as part of the Passover seder plate but can also be enjoyed as a sweet, spiced fruit and nut spread. Its combination of textures and flavors highlights the natural sweetness of the fruits and the aromatic spices, making it a distinctive accompaniment to ceremonial meals.

Using a food processor is essential to achieve the proper consistency. Preparing the garnish shortly before serving and treating apple slices with lemon juice will maintain their appearance. The charoset should be stored in an airtight container refrigerated and consumed within a reasonable time due to fruit oxidation.

Ingredients

Servings
  • 1 cup dates pitted, tightly packed
  • 3/4 cup walnut halves
  • 1 apple peeled, cored, and sliced
  • 1 banana small ripe
  • 2 tablespoons kosher wine sweet, or more to taste
  • 1/2 cup raisins
  • 1 teaspoon cinnamon
  • 1/4 teaspoon black pepper
  • apple few apple slices and walnut halves, for garnish
  • walnuts
  • lemon juice

Instructions

  1. Pulse the pitted dates and walnut halves in a food processor till they form a crumbly mixture.
  2. Add raisins, banana, apple, sweet wine, cinnamon and black pepper to the processor. Blend for 1-2 minutes, scraping the sides periodically, until mixture becomes the consistency of a sticky paste (like hummus).Taste the mixture. Add kosher wine for more sweetness and to soften the mixture, if desired.
  3. Best when served chilled. Store in an airtight container in the refrigerator. Please note that apples and bananas will begin to oxidize after the first day, and the mixture may darken in color. This is normal and does not affect the taste of the charoset.

Notes

  • A food processor is necessary for blending the ingredients into the characteristic paste.
  • Before serving, garnish with walnut halves and apple slices sprinkled with lemon juice to prevent browning.
  • Store the charoset in an airtight container refrigerated; color darkening over time is normal from fruit oxidation.
