Asian Chicken Lettuce Wraps

These lettuce wraps with chicken are a fast and easy meal! You'll love the homemade yum-yum sauce!

Ingredients

  • 2-3 chicken breast medium size, diced
  • 1 tbsp olive oil light
  • 3 garlic minced, cloves
  • 1 tsp ginger fresh and grated
  • 2 green onions sliced with the whites & greens separated
  • ¼ cup bell pepper diced, red
  • lettuce iceberg or butter lettuce, leaves
  • Yum yum sauce optional

Sauce Ingredients:

  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp hoisin sauce
  • 1 tbsp lime juice
  • 1 tbsp cornstarch
  • ½ tsp sesame oil

Instructions

  1. Start by mixing all the sauce ingredients together in a small bowl and set aside.
  2. Heat the olive oil in a pan over medium heat. Add the ginger, garlic, and white parts of the green onions. Cook the mixture until you can start to smell it, which will take about 1 minute.
  3. Add the chicken to the mixture and cook for 4-5 minutes. The chicken should be almost cooked all the way, but not quite. Add the bell pepper and sauce. Cook the mixture for 3-4 minutes, until the sauce is thick and the chicken is fully cooked.
  4. Serve by adding 1/4 cup of the mixture into a lettuce leaf. Add scallions and yum yum sauce on top.
