Bacon Egg and Cheese Breakfast Ring is the ultimate twist on a classic breakfast sandwich. Crescent rolls are packed with cheesy scrambled eggs, bacon, red peppers and onion. The perfect meal for family breakfast, holiday brunches, and meal prep breakfasts!

Ingredients
- 8 slices Bacon
- 6 eggs
- ½ red bell pepper (seeds removed, finely diced)
- ½ onion (yellow or red, finely diced)
- ¼ teaspoon salt (or to taste)
- ¼ teaspoon pepper (or to taste)
- 1 tube Pillsbury crescent rolls (8 regular sized crescents, see notes below)
- 1 cup cheddar cheese (shredded)
- everything Bagel seasoning (or sesame seeds, optional for topping)
- salsa (optional for serving)

Instructions
- Preheat oven to 375°F.
- In a large skillet over medium-high heat, add the bacon. Cook for about 3-4 minutes per side, or until cooked through and just starting to get crispy. You want the bacon to be a bit soft so that you can roll it in the crescent ring. Remove the cooked bacon from the pan and place on a paper towel to drain the excess fat.
- Remove some of the bacon fat from the pan so there is only about a teaspoon left. Add in the diced red bell pepper and onion. Sauté for 2-3 minutes or until tender.
- In a bowl add the eggs, season with the salt and pepper. Add to the pan and stir with a spatula to cook and scramble the eggs (the bell peppers and onions will become mixed into the scrambled eggs).
- Line a large sheet pan or pizza tray with parchment paper.
- Carefully open the crescent roll package and unroll them. To create the ring, arrange the crescent dough triangles with point of each triangle facing out towards the edge of the tray. Overlap each piece of dough so that the base (short side) of each triangle is lightly overlapped, it will look like a giant star shape on the pan and there will be a round circle open in center (see image). Don’t worry if the crescent dough points hang over edge of pan, they will be folded over soon. Press overlapping dough to flatten and stick the pieces together.
- On each crescent roll lay a piece of bacon along the stars points (i.e. from the center of the ring, outwards to the point of each piece of dough).
- Sprinkle half of the shredded cheese along the center of the dough ring. Evenly distribute the scrambled eggs over top of the cheese, then add the remaining cheese on top.
- One at a time, roll the crescents and bacon over by picking up each point of the star and folding it over the scrambled eggs and cheese. Tuck the stars point under the center of the ring to secure it in place.
- Optional: top the crescent rolls with Everything Bagel Seasoning or sesame seeds
- Bake for 20-25 minutes or until the crescents are cooked and golden brown.
- Serve with salsa to dip and enjoy! To serve, slice the ring where the scrambled eggs are exposed, this will give you the cleanest cuts and will serve 8 pieces. You can also slice into smaller pieces if preferred.
Notes
- This recipe is made best using Pillsbury regular sized crescent rolls. They are sold in 8 ounce tubes and there are 8 crescent rolls in the tube. If you can only find the grands crescents which have 4 grand size crescents in the tube, you will need to use two tubes. There will be more dough and it will puff up more!
- Doubling this recipe: if you would like to double this recipe we do not recommend doubling to create one large ring with 16 crescent rolls as it won’t fit on a sheet pan or pizza tray. If you would like to double this recipe we recommend making the recipe twice to make two separate breakfast rings that will serve 16 slices total. This is also a fun way to make two flavors! You can make one bacon, egg and cheese and the other ham, egg and cheese. Or you can make both bacon, egg and cheese and omit the red bell peppers and onions if you have guests who would prefer to not have those ingredients.
