Baked Apple Cups

Baked Apple Cups feature puff pastry cups filled with a cinnamon-spiced mixture of thinly sliced apples, brown sugar, lemon juice, and zest. The cups bake until golden and crisp, concentrating the apple's natural sweetness and creating a tender, warmly spiced filling. They're served warm, often with a side of vanilla ice cream.

Description

This recipe uses frozen puff pastry sheets cut into six portions to form cups in a muffin tin, brushed with melted butter, and sprinkled with sugar for extra crispness. The apple filling combines thinly sliced apples with brown sugar, cinnamon, nutmeg, lemon juice, and lemon zest, giving a balance of sweetness and bright citrus notes. The filling is divided evenly among the pastry cups before baking at 350°F until the pastry turns golden and the apples soften.

The contrast between the flaky, buttery pastry and the tender, lightly spiced apple filling offers a pleasant texture and flavor combination. Serving the apple cups with vanilla ice cream complements their warmth and adds creaminess, making this a suitable dessert for cooler days or casual gatherings.

Since the pastry must be thawed before use, plan ahead and keep the remaining pastry sheets frozen or repurpose them in other recipes. The sugar sprinkle on the pastry before baking contributes to a delicate crunch and subtle sweetness on the shell.

Ingredients

  • 1 ½ puff pastry frozen sheets
  • 2 T butter melted
  • 2 teaspoon sugar
  • 3 apple cored and thinly sliced
  • 2 T brown sugar 1 teaspoon
  • ½ teaspoon cinnamon
  • teaspoon nutmeg
  • 2 teaspoon lemon juice
  • 1 teaspoon lemon zested rind

Instructions

  1. Preheat oven to 350 degrees. Thaw puff pastry dough and cut into six pieces, discarding remaining two pieces. Brush with melted butter and place into greased 6 X 1 cup muffin tins. Sprinkle pastry with refined sugar. Combine remaining ingredients reserving 1 teaspoon brown sugar. Divide between tins and sprinkle with remaining brown sugar. Bake for 25-30 minutes or until pastry is golden. Serve with vanilla ice cream.

Notes

  • Use well-chilled or thawed puff pastry for easier handling and better rise.
  • Fill each pastry cup evenly to ensure consistent baking and texture.
  • Serve warm with vanilla ice cream to enhance the dessert's flavor and texture.
  • You can adjust the cinnamon and nutmeg amounts to taste for milder or stronger spice notes.
