Baked BBQ Chicken Recipe
Description
The Baked BBQ Chicken Recipe features chicken thighs marinated briefly or up to four hours in half of the BBQ sauce to infuse flavor. The chicken is placed skin side down on a parchment-lined baking sheet and baked at 425°F, allowing the meat to cook through and the skin to crisp. After 25 minutes, the chicken is flipped and basted with the reserved marinade, then baked for another 25 minutes. Finally, broiling with additional BBQ sauce caramelizes and darkens the surface, adding a sticky, rich glaze.
Using skin-on chicken helps keep the meat juicy, but the recipe suggests removing the skin before broiling if preferred while still basting the meat to preserve tenderness. The controlled broiling stage requires careful attention to prevent burning, yielding a flavorful crust and moist interior. This recipe highlights interplay between sauce, oven heat, and timing to develop complex BBQ chicken flavors.
It works well for casual dinners or meal prep and pairs well with classic side dishes like coleslaw or baked potatoes.
Ingredients
- 8 chicken thighs bone-in, skin-on
- ¾ cup BBQ sauce divided (see notes)
Instructions
- Place the chicken in a bowl and pour ½ cup of the BBQ sauce over top. Mix to combine then set aside while your oven heats. Or leave it to marinate in the fridge for up to 4 hours.
- Preheat your oven to 425 degrees. For easy cleanup, line a baking sheet with parchment paper.
- Place the chicken on the baking sheet skin side down. (Reserve any extra BBQ sauce left in the bowl.) Bake the chicken for 25 minutes.
- Flip the chicken over and baste the top with the BBQ sauce that was in the marinating bowl. Return to the oven and bake for another 25 minutes.
- Turn your oven to broil. Baste the top of the chicken with the remaining ¼ cup of BBQ sauce and broil for 3-5 minutes until the top is dark and caramelized. Keep a close eye on it and remove the chicken sooner if it starts to get too dark.
Notes
- For extra moisture, rub BBQ sauce under the chicken skin before cooking.
- If you prefer less fat, remove the skin before broiling and baste the meat directly with BBQ sauce.
- Use your preferred BBQ sauce to tailor the flavor profile.
- Keep a close eye during broiling to prevent over-browning or burning.
