Baked Plantains - Sierra Leone Flavours
Description
This recipe features ripe plantains peeled and cut diagonally into slices, brushed with vegetable oil and sprinkled with salt. The plantain slices are arranged on a baking tray and baked at a relatively high temperature until they develop golden color and slight browning around the edges.
The finished plantains have a soft, tender interior with caramelized edges that add texture and enhanced natural sugars. As a baked version of plantain, this method avoids frying and delivers a gentle, mild flavor.

Ingredients
- 2 plantain
- vegetable oil for brushing
- salt to taste
Instructions
- Preheat oven to fan assisted 180C / 200C / 400F / gas 6.
- Peel the plantains and cut into slices on the diagonal.
- Brush both sides of the slices with oil and put on a lightly oiled, lined baking tray and sprinkle on some salt
- Bake for about 25 mins or until golden and the edges start turning brown. Make sure to turn the plantains at least once during baking.
- Serve whilst warm.
