Ingredients

  • 1 lb whitefish I had the fishmonger remove the skin, fillet
  • olive oil

sauce

  • 1/2 cup heavy cream
  • lime or lemon, juice of 1
  • 1 Tbsp Dijon mustard stone ground
  • 2 caper drained, heaping tablespoon
  • 2 chive use parsley, or tarragon, if you don't have chives, heaping tablespoon, snipped, fresh
  • salt fresh cracked pepper
  • black pepper fresh cracked pepper

Instructions

  1. Preheat oven to 400F
  2. Drizzle a little oil in the bottom of a baking dish and lay the fish on top.
  3. Whisk together the sauce in a small bowl.  When you add the mustard and the lime to the cream it will thicken.  Taste the sauce and adjust the seasoning if needed.
  4. Spread the sauce thickly over the fish.
  5. Bake for about 20 minutes, and then put the dish under the broiler until it's slightly browned and bubbling.
  6. Sprinkle a few more chives across the top.
