Baklava Ice Cream Sundae

This dessert layers crispy fried phyllo dough pieces with crushed walnuts and pistachios seasoned with cinnamon and brown sugar, combined with vanilla ice cream and drizzled honey. The contrast between the warm, crunchy phyllo and nuts and the cold creamy ice cream creates a textured experience reminiscent of baklava flavors in a sundae form. It can be served individually or as a build-your-own sundae option.

Description

The Baklava Ice Cream Sundae adapts the traditional baklava components into a layered ice cream dessert. The phyllo dough is torn into card-sized pieces and fried in extra-virgin olive oil until golden and crisp, providing a flaky, crunchy element. The nut mixture combines crushed walnuts and pistachios with ground cinnamon and brown sugar, adding warmth and sweetness akin to baklava filling.

Layering begins with crispy phyllo at the base, followed by a scoop of vanilla ice cream, then the nut mixture, and a drizzle of warmed honey. This layering is repeated, finishing with phyllo, ice cream, nuts, and honey on top. The mixing of warm and cold components creates a pleasing texture and flavor contrast that nods to the classic dessert without baking.

It can be served immediately as plated sundaes or set up as a sundae bar allowing guests to assemble portions as desired, which is convenient for larger groups. Warming honey gently in a water bath loosens it for easy drizzling. This preparation is best enjoyed shortly after assembly to maintain phyllo crispness and the freshness of ingredients.

Ingredients

Servings
  • 1/4 cup extra-virgin olive oil
  • 4-6 phyllo dough torn into pieces the size of a deck of cards, sheets
  • 1/2 cup walnuts crushed
  • 1/2 cup pistachio crushed
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon brown sugar
  • 1 large tub (8 scoops) vanilla ice cream
  • 1/2 cup honey warmed

Instructions

  1. Fry the phyllo sheets: In a medium saucepan over medium heat, heat about 1/4 cup of oil until shimmering. Once the oil is hot, add the phyllo and fry, turning, until it’s crispy and golden brown on both sides (about 1 to 2 minutes per side). Use a pair of tongs to transfer the crispy phyllo to a large paper towel-lined plate lined to drain any excess oil.
  2. Season the nuts: In a small bowl, combine the walnuts, pistachios, cinnamon, and brown sugar.
  3. Assemble and serve: In four small serving cups, add a bit of the crispy phyllo to the bottom. Top with one scoop of the ice cream, followed by a tablespoon of the nut mixture, and a drizzle of warmed honey. Add more of the crispy phyllo and repeat in the same pattern, adding a scoop of ice cream, more nuts, and a drizzle of honey to finish. Serve immediately.

Notes

  • Warm honey by placing the jar in a bowl of warm water to make it easier to drizzle.
  • Set up as a sundae bar for guests to assemble their own sundaes, ideal for larger gatherings.
  • Fry phyllo until crisp and golden to maintain texture in the assembled sundae.
