  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 2 cloves garlic finely minced
  • ½ cup balsamic vinegar
  • ½ cup chicken stock
  • ¼ cup brown sugar
  • 1 tablespoon corn starch cold
  • 1 tablespoon water cold
  • parsley to serve, minced

Instructions

  1. Dry the pork chops with paper towel and then season both sides evenly with Italian seasoning, salt, and pepper.
  2. Heat the butter and olive oil in a large pan over medium-high heat. Add the pork chops and sear until golden on both sides, about 8-10 minutes total. If your chops have a fat cap on one side, brown this too. Remove the pork chops from the pan and put them on a plate.
  3. Remove all but 1 tablespoon of fat from the pan, add the garlic, and cook for 30 seconds. Add the balsamic vinegar, chicken stock, and brown sugar to the pan and bring it to a boil for two minutes, scraping the bottom of the pan to remove any stuck-on bits.
  4. Return the chops and any juices on the plate to the pan. Reduce the heat to medium-low, cover the pan, and continue to cook until the pork chops reach 145 degrees Fahrenheit, about five minutes.
  5. Remove the pork chops from the pan. In a small bowl, mix the cornstarch and cold water and then pour it into the pan. Stir for 30 seconds, until the sauce thickens, and then return the pork chops to the pan. Serve with a little minced parsley over the top.
