Description
This dessert starts by melting butter with coconut sugar, vanilla extract, ground cinnamon, and salt to create a bubbling caramel sauce. Bananas sliced lengthwise and crosswise are then cooked in this sauce until softened and slightly caramelized. Removing the pan from heat, dark rum is added, and the mixture is flambéed to burn off the alcohol while concentrating the flavors.
Serving the warm bananas and sauce over vanilla ice cream provides a pleasing temperature and texture contrast. The balance of sweet, spiced, and buttery flavors is complemented by the creamy ice cream base.
Leftovers can be refrigerated for up to two days and reheated gently either on low heat stirring frequently or in short microwave increments to preserve texture and flavor. Adding banana liquor along with rum intensifies the banana flavor if desired. Additional bananas can be sliced for serving larger groups, and a pinch of nutmeg offers an optional flavor variation.

- 6 tablespoons butter cut into pieces, unsalted
- ½ cup coconut sugar
- 1 teaspoon vanilla extract

Instructions
- Make the sauce. In a large skillet over medium heat, melt the butter with the coconut sugar, vanilla, cinnamon, and salt. Whisk constantly for about a minute, until the mixture starts to bubble.
- Soften the bananas. Add the bananas cut side down, and cook for 1 to 2 minutes, until softened and slightly caramelized. Then use a spatula to flip the bananas over.
- Flambé the sauce. Turn off the heat (this is super important!) and add the rum while the sauce is still bubbling. Use a long-reach lighter to ignite the sauce and flambé, shaking the pan until the flame goes out.
- Serve with ice cream. Divide the bananas and sauce between two serving plates, and top with a scoop of ice cream. Enjoy warm with melting ice cream!
Notes
- For a stronger banana flavor, add 2 tablespoons of banana liquor along with the dark rum when flambéing.
