Description

This ganache starts by gently heating heavy cream and unsweetened butter to boiling, then stirring in finely chopped dark chocolate until the mixture is smooth and glossy. Adding liqueur such as Amaretto, Grand Marnier, Cognac, or brandy imparts additional flavor, while cocoa powder adds depth. The mixture is refrigerated until firm.

Once set, the ganache can be spooned and rolled into balls, then coated with cocoa powder or nuts to finish. This process creates rich, creamy chocolate truffles or can be used as a filling or topping for desserts.

Different liqueur and nut combinations can be used to customize flavor profiles, such as Amaretto with almonds or Frangelico with hazelnuts.

  • 1 1/4 cups heavy cream
  • 4 tablespoons butter unsweetened
  • 1 pound dark chocolate or bittersweet, chopped
  • 1/4 cup liqueur Amaretto, Grand Marnier, Cognac or brandy
  • 1/4 cup cocoa powder

Instructions

  1. Heat cream and butter just to boiling.
  2. Remove from heat and add chopped chocolate.
  3. Stir until all the chocolate is melted and mixture is smooth.
  4. Add liqueur and stir.
  5. Refrigerate until cold and firm, a couple of hours or over-night.
  6. Using a teaspoon measure out and roll into balls. Roll in cocoa or nuts.
  7. Refrigerate until ready to package or serve.
