Ingredients
Ingredients for the Bay Infused Cream
- ½ cup heavy cream or double cream
- 6 bay leaves fresh or dried bay will work in this recipe, fold the leaves to snap the spine to get the most flavor.
Ingredients for Blackberry Syrup
- 1 cup blackberries you can use fresh or frozen here
- 1 tablespoon granulated sugar or caster sugar
- 4 bay leaves fresh bay or dried bay will work in this recipe, crease the leaves for best flavor
Ingredients for the Donuts
- 1¾ cup all purpose flour or plain flour
- 1¼ teaspoon baking powder
- ¾ teaspoon salt
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- 10 tablespoon unsalted butter softened at room temperature
- 1 cup granulated sugar or caster sugar
- 2 large eggs ideally at room temperature
- 1 teaspoon vanilla
- ½ cup bay infused heavy cream (instructions included in this recipe card)

- ½ cup powdered sugar or icing sugar
- 3 tablespoon blackberry bay syrup (instructions included in this recipe card)
Instructions
Instructions for the Bay-Infused Cream
- Place the cream in a small saucepan along with the bay leaves. Cook over a medium low heat, stirring occasionally. Let this simmer and avoid bringing to a boil, cooking for about 10-15 minutes.
- Then remove from the heat and allow to cool completely with the leaves still in the pan. This will help them continue to infuse.
- Discard the leaves before use.
Instructions for the Blackberry Bay Syrup
- In a small saucepan, add all syrup ingredients and cook over a medium heat, mashing the blackberries to release their juices. Allow to simmer for about 15 minutes before removing from the heat and straining to remove the seeds. Set aside to cool until time for making the glaze.
Instructions for Donuts
- Preheat the oven to 350°F (175C/165C Fan) and prepare donut molds.
- In a medium bowl, mix together the flour, baking powder, salt, cinnamon and nutmeg.
- In a large bowl, cream together the softened butter and sugar.
- Add the eggs to the butter and sugar, one at a time, beating until incorporated. Add the vanilla. Then add the flour mixture slowly in a few additions.
- Once dry ingredients are incorporated, pour the bay infused cream in, mixing continuously until the batter is well incorporated.
- Add the batter to a piping bag (or plastic bag), snip off the end and fill around the moulds, until these are about ¾ full.
- Bake in the centre of the oven for about 20 minutes, rotating halfway through. Once done, remove from the oven and leave to cool in the pan for a few minutes before carefully unmoulding and cooling completely on a wire rack.
Instructions for Glaze
- For the glaze, whisk together the icing sugar and blackberry bay syrup. Then, holding the donuts by their base, dip the tops into the glaze to coat.
