Berry Cheesecake Overnight Oats is a high protein breakfast or snack that mimics that same creamy cheesecake filling we know and love thanks to blending cottage cheese and berries together. It's a delicious meal prep breakfast to serve with fresh berries, grahams crackers, honey, and more! Dairy free friendly, gluten free.

Ingredients
- 1 cup small curd cottage cheese 2% or 4% for best taste
- 1.5 cups milk cashew, almond, soy, or cow’s - see notes
- 2 tablespoons pure maple syrup
- 1 cup quartered strawberries sliced, then measured
- 1/2 teaspoon vanilla bean powder or 1 teaspoon vanilla extract
- 2 cups rolled oats or quick cooking oats
- 2 tablespoons chia seeds
For Serving

Instructions
- In a blender add cottage cheese, milk, maple syrup, strawberries, and vanilla. Blend until smooth, about 20 seconds.
- Chill: Pour mixture into a large bowl (about 4 cup capacity) and add in oats and chia seeds. Stir until combined, cover with lid, and place in refrigerator for at least two hours.
- Serve: Once the oatmeal has thickened, serve with fresh blueberries, strawberries and graham crackers for the ultimate cheesecake overnight oats.
- To make individual servings, crush graham crackers and add to the bottom of your jars. Evenly distribute overnight oats mixture into the jars, layering in berries and more graham cracker crumbs if you’d like. Enjoy with a drizzle of honey and even some fresh lemon zest if you’d like.
