Description

The tart begins with a shortbread-style crust made from butter, flour, and confectioners’ sugar blended until smooth and pressed evenly into a tart pan. Once baked until lightly golden and cooled, the crust is ready for the filling.

The filling combines softened mascarpone cheese with heavy cream, vanilla, and freshly grated orange zest, whipped until smooth and evenly spread over the crust. A layer of strawberry jam is added on top of the mascarpone for sweetness and to keep the berry topping moist.

For the shortbread crust

  • 1 cup butter 2 sticks softened, salted
  • 2 cups all-purpose flour
  • 1/2 cup confectioners sugar

For the toppings

  • 2 cups mascarpone cheese softened. Leave it out for an hour before mixing.
  • 1/2 cup heavy cream or half and half
  • 1 vanilla bean or 1 tsp vanilla extract
  • 2 teaspoons confectioners' sugar
  • 2 orange juiced and zested
  • 4 cups strawberries cut in half
  • 1 cup blueberries
  • 1 cup strawberry jam

Instructions

  1. Wash and clean the strawberries and cut them in half. Place them in a bowl and add the juice of the two oranges all over and let them sit. Wash and drain the blueberries.

Make the crust

  1. Preheat oven to 350º F.
  2. Using a mixer (hand or regular) mix together butter, flour, and confectioner’s sugar, 2-3 min.
  3. Add dough to the tart pan and press all over, and up the edges until it is evenly distributed. Trim edges with a knife if you have to and add the extra dough to any bald or thin patches.
  4. Bake for approximately 20-25 minutes, or until lightly golden brown.
  5. Remove from oven and allow to cool completely before filling.

Prepare the filling

  1. Using a mixer in medium speed beat the mascarpone cheese with the heavy cream and the vanilla. Add the orange zest. Keep beating mixture for 1-2 min until everything is incorporated well, about 2 min.
  2. Spread the mascarpone mix evenly all over the tart crust.
  3. Add an even layer of the strawberry jam on top of the mascarpone.
  4. Arrange the berries in a pattern of your choice. Enjoy!
