BEST Banana Curry Recipe

Banana Curry combines ripe bananas with coconut milk, aromatic curry powder, and vegetables like cauliflower and sweet potato to create a unique sweet and savory curry. Chickpeas add texture and protein, while caramelizing some bananas before blending the sauce intensifies the sweetness that balances the spices and heat in the dish.

Description

The BEST Banana Curry Recipe starts by browning ripe banana pieces in coconut oil to develop caramelized notes. A cooked onion, garlic, and ginger mixture is then blended with half of the bananas, coconut milk, curry powder, and salt to form a smooth, flavorful sauce. This sauce is heated with cauliflower, sweet potato, and chickpeas until tender, melding the flavors.

The finished curry offers a blend of sweet banana and rich coconut milk balanced by the warmth and earthiness of the curry powder and the savory depth from garlic and ginger. The texture combines creamy sauce with soft cooked vegetables and tender chickpeas, providing a satisfying vegetarian main or side.

Cilantro sprinkled on top adds a fresh herbal contrast to the rich sauce. This curry can be served on its own or alongside rice or flatbread for a complete meal.

Ingredients

Servings
  • 2 tablespoons coconut oil divided
  • 4 banana cut into ½-inch pieces, ripe
  • 1 medium onion chopped
  • 4 cloves garlic chopped
  • 2 inch ginger chopped, piece
  • 15 ounce coconut milk can
  • 2 tablespoons curry powder
  • 1 teaspoon salt sea salt
  • 4 cups cauliflower chopped
  • 1 medium sweet potato chopped
  • 19 ounce chickpeas drained and rinsed, canned
  • cilantro to serve

Instructions

  1. Heat 1 tablespoon of the coconut oil over medium-high heat in a large, nonstick pan. Add the bananas, cut sides facing down. Cook for 2-3 minutes, or until they are well browned. Flip them over and cook for another 2-3 minutes. Remove them from the pan.
  2. Add the remaining tablespoon of coconut oil, the onion, garlic, and ginger to the pan. Cook until the onion is translucent, about 3 minutes.
  3. Transfer the onion mix to your blender. Add ½ cup of the cooked bananas, the coconut milk, curry powder, and salt and blend on high speed until smooth.
  4. Pour the sauce into a large pot over medium-high heat. Add the cauliflower, sweet potato, and chickpeas and bring the curry to a boil. Reduce the heat and simmer, uncovered, until the vegetables are tender, about 15 minutes. Stir the remaining caramelized bananas into the sauce then serve with cilantro sprinkled on top.
