Best Coconut Flour Chocolate Chip Cookies

These coconut flour chocolate chip cookies are dense and tender with a sweetness balanced by pure maple syrup and the richness of coconut oil. Coconut flour absorbs moisture uniquely, so the batter thickens before baking. Dark chocolate chips distribute throughout for bursts of chocolate in each cookie. Baking at 350°F until the edges are golden creates a chewy texture with a slightly crisp edge.

Description

This recipe blends coconut flour, melted coconut oil, pure maple syrup, and eggs to form a thick batter that holds together well. Vanilla extract and a bit of baking soda give flavor and lift. Dark chocolate chips are folded in for chocolate bursts. Since coconut flour doesn’t behave like wheat flour, the batter starts runny but thickens as it stands.

Baked as single flattened spoonfuls, these cookies won’t spread like traditional cookies but develop golden edges while keeping a moist, chewy center. The use of coconut oil and coconut flour impart a mild coconut flavor, and the maple syrup adds sweetness without refined sugar.

These cookies work well as a dessert or snack, especially for those preferring flour alternatives. They keep their shape and texture without spreading, making portion control easy. Optional brand recommendations for allergy-friendly chips are provided.

The original notes advise adding an extra tablespoon of coconut flour if the batter doesn’t thicken, which results in slightly denser cookies but maintains good flavor and texture.

Ingredients

Servings
  • 1/3 cup coconut flour leveled off (48 grams, 1 tablespoon
  • 1/4 cup coconut oil , melted (54 grams)
  • 1/4 cup pure maple syrup (79 grams)
  • 1 teaspoon vanilla extract (4 grams)
  • 1/4 teaspoon baking soda (1 gram)
  • 1/4 teaspoon salt (2 grams)
  • 2 egg whole
  • 1/3 cup dark chocolate chips

Instructions

  1. Preheat your oven to 350F and line a baking sheet with a Silpat or parchment paper.
  2. In a medium bowl, whisk together the coconut flour, oil, maple syrup, vanilla, baking soda, salt, and eggs until a uniform batter is created. The batter will start off a bit runny, but will thicken as the coconut flour starts to absorb the moisture. Add in the chocolate chips, and stir to distribute them evenly. (Note: Enjoy Life brand chocolate chips are dairy-free & nut-free.)
  3. Use a heaping tablespoon to drop the cookie dough onto the lined baking sheet, and use your hands to flatten the cookies. Keep in mind these cookies will NOT spread on their own, so you'll want to shape them how you'd like them to turn out.
  4. Bake at 350F for 12-14 minutes, until the edges are golden brown. Allow to cool on the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • If the cookie batter remains too runny, add up to one more tablespoon of coconut flour to thicken it, noting the texture will become slightly denser.
  • Use dairy- and nut-free chocolate chips like the Enjoy Life brand for allergy-friendly cookies.
