Best Vegan Apple Crumble brings together sliced Granny Smith and Honeycrisp apples with dried cranberries, demerara sugar, and warm spices such as cinnamon, nutmeg, and ginger. The filling is spread in a baking dish before being covered with a crumble made from toasted chopped hazelnuts, almond flour, and optionally rice flour, combined with melted coconut butter for a rich, crisp topping.

Baking at 350°F for 30-40 minutes softens the apple filling as the topping crisps and turns golden brown. The contrast between the soft, slightly tart apple mixture and the crunchy nut-based topping provides satisfying texture and flavor complexity. Covering the crumble with foil if it browns too quickly helps ensure even cooking.

Filling:

  • 2 apple peeled, cored, and thinly sliced, Granny Smith variety
  • 2 honeycrisp apples peeled, cored, and thinly sliced
  • 2 tablespoon dried cranberries softened, chopped
  • 1 teaspoon demerara sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger

Topping:

  • 115 g hazelnut toasted and roughly chopped
  • 120 g almond flour
  • 1 tablespoon rice flour optional
  • 4 tablespoon demerara sugar
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt sea salt
  • 4 tablespoon coconut butter melted

Instructions

  1. Preheat oven to 350 F/180 C.
  2. In a large bowl, mix sliced apples, cranberries, sugar, cinnamon, nutmeg and ginger powder. Distribute the mixture evenly in a medium baking dish.
  3. In the bowl previously used, mix together chopped hazelnuts, almond flour, rice flour (if using), demerara sugar, cinnamon, salt and coconut butter. If the mixture looks too wet add in 1 tablespoon of rice flour.
  4. Distribute the topping mixture evenly all over the apple filling.
  5. Place the apple crisp in the oven, and bake for about 30-40 minutes, or until the apple filling is soft and the topping is crunchy and golden-brown. If the top browns too quickly, cover with foil and continue to bake. 
  6. Once ready, remove the apple crumble from the oven and allow to cool before serving.

Notes

  • Use firm and slightly tart apple varieties such as Granny Smith combined with Honeycrisp for balance in flavor and texture.
  • To vary the nut topping, replace half the hazelnuts with almond flakes, pecans, walnuts, or pistachios according to preference.
  • Cover the crumble with foil during baking if the topping starts to brown too quickly to prevent burning.
