Biscoff Slice (No Bake)

Biscoff Slice is a super delicious no-bake slice recipe with a Lotus Biscoff cookie base plus a layer of chocolate and more Biscoff spread on top. Great for Biscoff lovers!

Ingredients

Servings
  • 150 g sweetened condensed milk
  • 70 g butter salted
  • 50 g Biscoff spread room temperature
  • 250 g Biscoff cookies

Top layer

  • 200 g milk chocolate
  • 1 tablespoon vegetable oil
  • 1 tablespoon Biscoff spread room temperature
  • 1 tablespoon Biscoff spread optional drizzle, warmed in the microwave

Instructions

  1. Grease and line a 20cm (8") square baking pan with baking paper (leaving some overhang) and set aside.
  2. Place the sweetened condensed milk and butter in a large bowl, and place in the microwave to melt the butter.
  3. Once butter is melted add in Biscoff spread and mix to combine.
  4. Add in crushed biscuits and mix well.
  5. Tip the base mixture into the prepared tin, pressing into an even layer and smoothing the top (use the back of a large spoon or a silicone spatula for this). Use a piece of kitchen towel to blot any oily residue on the top.

Top layer

  1. Place chocolate and vegetable oil into a small bowl.
  2. Microwave in 30-second bursts (mixing between each) until chocolate is melted.
  3. Mix in Biscoff spread then pour chocolate mixture over the base and place in the fridge for 2-3 hours or until set.
  4. Once the slice has set, drizzle with warmed Biscoff (optional - see my notes) and then cut into slices.

Notes

  • *Please note that the amount of calories per serve is provided as a guide only, as ingredients and cooking methods can vary greatly*
  • It's important to grease and line the baking pan so you can get the slice out once it's set. Leave some parchment paper overhanging to give you something to grip onto as well.
  • I use a food processor to crush the biscuits, you could also pop them into a plastic bag and crush them with a rolling pin.
  • If you can't get the slice out, sit the base of the tin in hot water for a second or two.
  • For the Biscoff drizzle - if you would like to serve these with the drizzle set firm, place the slice back into the fridge to allow the Biscoff to cool and firm up.
