  • cup butter unsalted
  • cup granulated sugar
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • 2 cups all-purpose flour
  • 2 egg beaten
  • 1 teaspoon vanilla extract
  • ¼ teaspoon almond extract
  • cup almonds slivered
  • ½ cup dried cranberries optional

Instructions

  1. Preheat oven to 350°F. Line a pan with parchment paper.
  2. With a mixer on medium, combine butter, sugar, baking powder and salt, until light and fluffy.
  3. Add eggs and vanilla, mix well. Add in flour a little at a time until incorporated. Fold in almonds and cranberries.
  4. Divide dough in half and form each half into a 10"x2" rectangle. Place on a parchment lined pan.
  5. Bake 25 minutes or until golden.
  6. Remove from the oven and cool 10-15 minutes. Slice on an angle into 1" slices and lay flat on the baking sheet.
  7. Bake an additional 10-15 minutes or until browned. Remove from the oven and cool completely on wire racks.

Notes

  • For extra flavor, drizzle melted white chocolate on the biscotti once fully cooled.
  • Let biscotti cool completely on wire racks after the second bake for best crispness.
  • You can omit dried cranberries if preferred; almonds alone provide good texture and flavor.
