Description
This dessert involves washing the black glutinous rice and cooking it until soft and creamy either in an Instant Pot using high pressure and natural release or on the stovetop by simmering for about an hour. Sago pearls are boiled separately for 5 to 10 minutes, then allowed to rest covered off heat to cook through, before being rinsed under cold water to remove excess starch and prevent clumping. Once both components are prepared, coconut milk and sugar are stirred in to create a rich, sweetened base.
The resulting dish features sticky, tender black rice with a unique chewy texture combined with soft and slightly chewy sago pearls. The coconut milk adds creaminess and a subtle tropical flavor, balanced by the sweetness of the sugar which can be adjusted to taste. The dessert is served warm or at room temperature.
Cooking sago properly is important to avoid mushiness; boiling then resting off heat lets the pearls cook evenly inside. Soaking black sticky rice beforehand can reduce cooking time if using the stovetop method. This dessert offers a comforting and texturally interesting sweet course.
Ingredients
- 1.5 cups black glutinous rice
- ½ cup sago (small tapioca)
- 6 cups water
- 1 can coconut milk (13.5 fl oz or 400ml)
- 1 cup sugar (can be less or more depending your sweetness)
Instructions
Instant pot method:
- Wash 1.5 cups of the black glutinous rice. Put it into the instant pot, then pour 6 cups of water. Close the lid and vent, press the manual button to adjust time for 20 minutes at high pressure and natural release.
- While cooking the black sticky rice, pour 4 cups of water into a pot and turn on a high fire. When the water is boiling, put ½ cup of sago (small tapioca).
- Let it boil for 5-10 minutes. After that, turn off the heat and cover the lid for 10 minutes.
- Next, use a strainer to drain the sago and rinse in cold water.
- When the black glutinous rice is done, add 1 cup of sugar (add to your sweetness), 1 can of coconut milk (13.5 fl oz or 400ml), and the cooked sago from step 4. Mix it well.
Stove top method:
- Wash 1.5 cups of black glutinous rice, then pour 8 cups of water into the pot. Turn on a high fire. When the water boils, turn the fire to small. Let it simmer for an hour or so. (If you want to shorten the cooking time, soaking the rice 2 hours before cooking will help.)
- While cooking the black sticky rice, pour 4 cups of water in a pot . Turn on high fire until water boils.
- When water is boiling, pour ½ cup of sago into the pot and let it boil for 5-10 minutes. After that, turn off the heat and cover the lid for 10 minutes.
- Next, use a strainer to drain the sago and rinse in cold water.
- When the black glutinous rice is done, add 1 cup of sugar (add to your sweetness), 1 can of coconut milk (13.5 fl oz or 400ml), and the cooked sago from step 4. Mix it well.
Notes
- Cook black glutinous rice in a pressure cooker on high for 20 minutes for faster results, or simmer on stovetop for about an hour with extra water.
- Boil sago pearls for 5–10 minutes, then cover and let rest off heat for 10 minutes to cook fully; rinse with cold water to prevent stickiness.
- Add coconut milk and sugar to the cooked rice and sago, adjusting sugar to desired sweetness.
- Handle sago pearls carefully to avoid overcooking, which causes mushiness.
