Description

The syrup preparation involves heating blackberries with sugar and water to dissolve the sugar and soften the fruit. A gentle simmer facilitates flavor infusion and color extraction. After about six minutes, the berries are mashed to increase juice release, producing a richly colored and flavored syrup. The mixture is then strained through a sieve to separate out seeds and pulp, producing a smooth liquid ideal for use as a sweetener or flavor enhancer. The result is a syrup with fresh berry taste and bright color that can be stored and used in various beverages or culinary applications.

  • 350 grams blackberry fresh or frozen
  • 250 millilitre water
  • 250 millilitre sugar

Instructions

  1. Add the blackberries to a medium saucepan along with the sugar and water.
  2. Turn the heat to medium and gently keep moving the blackberries around with a spoon. This will help distribute the heat and dissolve the sugar.
  3. Bring the mixture up to a gentle simmer and turn the heat down to medium-low. Continue simmering for around 6 minutes. You will notice that the blackberries are starting to look paler, the syrup brighter and the bubbles a dark reddish purple.
  4. Around the 6 minute mark, start to gently mash the berries into the liquid with a potato masher, or fork. Continue doing this for around 2 minutes. Remove the saucepan from the heat.
  5. Place a sieve over a bowl, or large jug, and pour the blackberry syrup into the sieve. Allow it to drip by itself for a minute or two.
  6. Using a silicone spatula (this is the best tool for the job) or a spoon, mash and scrape the pulp around the sieve to squeeze as much of the liquid through the tiny holes as possible.
  7. Pour the now strained syrup into a jug. Let it cool before storing it in the fridge.
  8. Top tip: Don't discard the pulp, it's delicious stirred into some thick Greek yoghurt, just mind the seeds.
