Description
This recipe uses soft Medjool dates soaked briefly to ease blending and enhance moisture. Almonds are coarsely ground to retain some texture without becoming powdery. The dates and almonds are combined to form a soft, pliable paste that can be shaped by hand into small balls roughly 1½ inches in diameter. Finally, the bliss balls are coated with cacao powder, which contributes a mild chocolate note and helps keep the surface from being overly sticky.
The resulting bites have a chewy texture with crunch from the nuts and a naturally sweet flavor from the dates and cocoa. They require no baking, making them easy to prepare and ideal for storing as ready-to-eat snacks.
Bliss Balls keep well refrigerated for up to two weeks and freeze well for up to three months. Defrost them in the fridge or at room temperature before serving. Adjust the size of the balls as preferred, and different nuts or coatings can be used for variation.
Ingredients
- 200 g Medjool dates 1½ cups, medium size, pitted
- 80 g almonds ½ cup + 1 tablespoon
- 15 g cacao powder 2 tablespoons, or cacao protein powder
Instructions
- Soak 200 g medjool dates in water for 2 minutes then drain and set aside.
- Coarsely grind 80 g almonds in a blender then add the dates and grind to a paste.
- Spoon the mixture into a plate and roll into small balls roughly 1½ inches in diameter.
- Roll in 15 g cacao powder and place on a tray to firm up.

- Use Medjool dates for their size and moist texture to produce a sticky, flavorful base.
- Soak the dates briefly in water before blending for easier processing and moisture.
- Coarsely grind almonds for texture; avoid pulverizing them into a fine powder.
- Roll bliss balls in cacao or cocoa powder to add flavor and reduce stickiness.
- Store chilled in a sealed container with wax paper between layers for up to two weeks.
