Ingredients

Servings

Panna Cotta:

  • 2 tablespoons water cold, 30 milliliters
  • 1 tablespoon gelatin powder 9 grams
  • 2 cups heavy cream 480 milliliters
  • 1 cup milk 240 milliliters
  • 1/3 cup granulated sugar 67 grams
  • 1/2 vanilla bean or 1 1/2 teaspoons vanilla bean paste

Blood Orange Gelatin:

  • 1 tablespoon water cold, 15 milliliters
  • 1 1/2 teaspoons gelatin powder 4 grams
  • 1 1/2 cups blood orange juice freshly squeezed, 355 milliliters
  • 1/4 cup granulated sugar 50 grams

Instructions

To make the Panna Cotta:

  1. In a small bowl, sprinkle the gelatin over the water. Set aside as you prepare the remaining ingredients.
  2. In a medium saucepan, whisk together the heavy cream, milk, and granulated sugar over medium heat.
  3. Scrape in the seeds from the vanilla bean and add the pod.
  4. Stir often until the sugar is dissolved and the mixture barely begins to bubble on the edges.
  5. Remove from heat and set aside for 10 minutes (no longer). Discard the vanilla pod.
  6. Add the gelatin with the water. Whisk until smooth.
  7. Transfer among individual serving glasses about 3/4 full (leaving room in each one for the blood orange layer). Cover and chill until set, 4 hours to overnight.

  5. Cover and return to the refrigerator for another 4 hours or up to three days until set.
  6. Serve chilled.
