- ¾ cup steel cut oats I use Bob's Red Mill
- ⅓ cup raw pepitas could substitute raw nuts
- 2 tablespoon flaxseed meal
- 1 teaspoon baking powder
- 1 teaspoon ground ginger
- ¾ teaspoon salt
- 2 cups unsweetened almond coconut milk
- ⅓ cup pure maple syrup
- 2 tablespoon melted coconut oil cooled slightly
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen blueberries
