Ingredients
- 1 3/4 cup milk of choice
- 1 egg
- 1/4 cup maple syrup
- 1 teaspoon lemon zest
- Juice of a lemon (approximately 1/4 cup)
- 1 teaspoon vanilla extract
- 1 scoop vanilla or unflavored protein powder optional
- 1 teaspoon baking powder
- 1/2 teaspoon kosher salt
- 2 cups rolled oats
- 1 1/2 cups blueberries

Instructions
- Preheat oven to 350° F. and spray a 8x8 or similar size baking dish with cooking oil.
- In a large bowl whisk together the egg, milk, maple syrup, vanilla, lemon zest and lemon juice.
- Whisk in the salt, baking powder, and protein power.
- Stir in the oats and blueberries until combined. Pour the mixture into the prepared baking dish and bake for 40-45 minutes or until set and pulling away from the edges of the dish. Let it cool for at least 10-15 minutes before serving. Top with lemon Greek yogurt if desired.
