Blueberry Baked Oatmeal

This Blueberry Baked Oatmeal is an easy, make-ahead breakfast that is naturally gluten-free and filling. Great for kids and adults!

Ingredients

  • 1 cup rolled, old-fashioned oats
  • 4 tablespoons coconut sugar
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup unsweetened vanilla almond milk
  • 1/2 cup banana mashed
  • 1 egg
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups frozen blueberries thawed
  • 1 banana sliced, for garnish

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit and spray a casserole dish with cooking spray.
  2. In a medium bowl, whisk the oats, sugar, cinnamon, baking soda, and salt.
  3. In a separate large bowl, whisk the plant milk, mashed banana, egg and vanilla extract together.
  4. Add the dry ingredients into the wet and stir until combined. Fold in the blueberries.
  5. Pour into the casserole dish, top with the sliced banana, and bake until set, about 45 minutes. Let cool to room temperature in the dish.
  6. DEVOUR!
