Blueberry Clafoutis (Julia Child Recipe)

Blueberry Clafoutis is a custard-like baked dessert featuring sweet blueberries suspended in a smooth, lightly sweetened batter. This recipe from Julia Child delivers a tender, slightly puffy dessert with a pale golden top, offering a balance of fruity brightness and creamy texture. It works well for breakfast, dessert, or brunch.

Description

This Blueberry Clafoutis combines milk, sugar, eggs, vanilla, salt, and flour into a smooth batter that is poured in stages over fresh blueberries in a greased baking dish. A partial baking step sets a thin layer of the batter before the berries and remaining batter are added for a full bake lasting about 50 minutes. The result is a lightly puffed, golden-topped custard with the blueberries providing bursts of juiciness.

The dish is traditionally served warm and can be enjoyed as a fruity dessert or a sweet breakfast option. Its moderate sweetness and creamy texture complement the tartness of the blueberries.

To assess doneness, the clafoutis should be puffed and golden with a clean toothpick insertion. Leftovers keep up to two days in the refrigerator when covered tightly to preserve moisture and flavor.

Ingredients

Servings
  • 1 ¼ cup milk whole
  • cup granulated sugar
  • 3 egg
  • 1 tablespoon vanilla extract
  • teaspoon salt
  • 2 cups blueberries
  • 1 cup all-purpose flour

Instructions

  1. Preheat the oven 350 F.
  2. In a bowl of a standing mixer, combine milk, ⅓ cup of sugar, eggs, vanilla, salt and flour. Blend until the mixture is smooth and frothy.
  3. Lightly grease 8*8 baking dish with butter and pour a ¼ inch layer of the batter. Place it in the oven and let the batter set for about 5 minutes until a film of batter forms on top of it.
  4. Remove from the oven, spread blueberries and then the remaining sugar on top of the batter.
  5. Pour on the remaining batter and smooth with the back of a wooden spoon.
  6. Bake for 50 minutes.
  7. Serve warm and enjoy!

Notes

  • The clafoutis is done when puffed, golden brown on top, and a toothpick inserted in the center comes out clean, usually after 50 minutes.
  • Store leftovers in the refrigerator for up to two days, covering with plastic wrap or an airtight container to maintain freshness.
