Blueberry Crumble

Blueberry Filling

  • 8 cups blueberries
  • 1/4 cup lemon juice
  • 1/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract

Crumble Topping

  • 1 1/2 cups all-purpose flour
  • 3/4 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup butter cold and cubed

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease a 9x9-inch baking pan.
  2. In a large mixing bowl, combine the 8 cups blueberries, 1/4 cup lemon juice, 1/4 cup granulated sugar, 2 tablespoons cornstarch, 1/2 teaspoon ground cinnamon, and 1/2 teaspoon vanilla extract. Toss gently until the blueberries are evenly coated. Pour the mixture into the prepared baking pan, ensuring you include any juices from the bowl.
  3. In a medium mixing bowl, combine 1 1/2 cups all-purpose flour, 3/4 cup brown sugar, and 1/2 teaspoon ground cinnamon. Add the cold, cubed butter and use a pastry cutter or your fingers to cut the butter into the dry ingredients until the mixture resembles coarse crumbs with both large and small clumps.
  4. Evenly sprinkle the crumble topping over the blueberry filling.
  5. Bake in the preheated oven for 40-45 minutes, or until the crumble is golden brown and the blueberry filling is bubbling around the edges.

Notes

  • If using frozen blueberries, double the amount of cornstarch called for in the recipe to compensate for the additional liquid.
