Brazilian Pavê Dessert

Brazilian Pavê is a layered dessert made by soaking María cookies in a vanilla, milk, and brandy mixture, then layering them with a creamy blend of lemon juice, condensed milk, and evaporated milk. Description

This Brazilian Pavê dessert features a custard-like filling of blended lemon juice, condensed milk, and evaporated milk that is poured over layers of María cookies. The cookies are first briefly soaked in a mixture of regular milk, vanilla, and brandy to soften but retain some structure. The layering is repeated three times to produce alternating layers of cookies and lemon-flavored cream.

Once assembled, the dessert is chilled for at least five hours, allowing the layers to firm and flavors to meld. The lemon juice imparts a fresh tartness that balances the sweetness of the condensed milk, making for a creamy and tangy treat. Optional toppings like chocolate chips, grated coconut, or sliced fruit add texture and visual appeal.

Ingredients

  • 1 cup milk
  • 3 teaspoons vanilla
  • 3 teaspoons brandy
  • 1 can condensed milk 14 oz/ 415 ml
  • 1 cup evaporated milk
  • 1 1/2 cup lemon juice about 8 lemons
  • 35- 40 cookies galletas marias/ ladyfingers/ biscuits

For topping (optional):

  • chocolate chips
  • coconut grated, to taste
  • Fruit sliced

Instructions

  1. Take a baking dish and add the regular milk, brandy and vanilla and stir well.
  2. Next, in a blender, combine the lemon juice, condensed milk and evaporated milk for about 3 minutes.
  3. Place each María cookie into the vanilla milk and brandy mixture, allowing it to soak up the liquid for a few seconds and place them in an even layer at the bottom of a baking dish. Make sure not to leave the cookies in the mixture too long or they will become soggy and fall apart.
  4. Arrange some cookies along the edge of the dish too, if you like.
  5. Pour a third of the milk and lemon juice mixture over the layer of cookies and follow up with another layer of moistened cookies.
  6. Pour another third of the milk mixture on top of that and repeat the process once more, finishing with a milk layer.
  7. When you're done you should have 3 layers each of cookies and milk.
  8. Put the Pavé dessert in the fridge to firm for at least 5 hours.
  9. Once ready to serve, sprinkle the top with chocolate chips, grated coconut or, if you want, you can also add sliced fruit as well.
